SANCERRE
This 18 hectares vineyard surrounds one of the rare castles in Sancerre, in Thauvenay ( South East of the Appellation). Facing the Loire, the Vineyard is located on very nice chalky soil.
Vineyard:
• Grape variety: 100% Sauvignon Blanc
• Terroir: Clay chalky marl
Harvest:
• Yield: 55 hl/ha,
• Hand and mechanical picking
• Pneumatic pressing with juice selection.
Vinification:
• Fermentation in small thermoregulated stainless steel tanks.
• Separated vinification between younger and older vines.
• Maturation on lees until bottling on April.
Characteristics:
• 2022 vintage is perfectly ripe with amazing aromas.
• Very expressive nose of exotic fruits like pineapple, mango, grapefruit
• On the palate, very fat and aromatic wine.
• Nice acidity bringing freshness.
Accompaniments: Serve with smoked salmon, lobster, grilled fish but alsoas an aperitif and of course with dry goat cheese.

LES VINES DU BARON
CREMANT DE LOIRE
BLANC DE BLANCS
Vineyard:Supply only in grapes in order to control the pressing and vinification.
Grape variety: Chenin (60%) & Chardonnay (40%).
Harvest:
• Entirely hand-picked in small crates.
• Pneumatic pressing immediately after gathering for 80% of the grapes and a short maceration of 12 hours ( during the night ) in pneumatic presses for 20% of the grapes ( 160kg of grapes gives 100l of Juice ).
Vinification & Maturation:
• Vinification in stainless steel thermoregulated tanks
• The second fermentation is drawn in the bottle(traditional method )
• Maturation on the lees for a minimum of 12 months in our freestone cellars across 6km.
Tasting Notes:
• Very Light yellow color
• An elegant nose of citrus fruits and white fruits ( pear ) Fresh, fruity easy to drink!
